Cooking with a team! As a former chef, I was very critical towards the food I was presented, but after starting my own team and cooking a contest, trying to be on top of my game while not sleeping in 36 hours, it was a great experience where I realized what it's like to cook out in the elements with a smoker and all of the techniques it takes to present championship BBQ.
