Dave,that 205* veries ok i cook till its tender sometimes it is 205* sometimes its 198* but i do start checking for tenderness at 195* and usually ifn im makin burnt ends out of point it will go back on for 1 hour then remove chop into cubes add more rub put em in a foil panand then back on again for 30-45 min
