Going back 11 years or so I have learned a tremendous amount about BBQ from Ray. I consider myself a really good brisket cook and Ray is one of the people that helped turn on a light bulb that helped me get there. Rays Big Time Book is also responsible for a couple of terrific finishes I had in pork at large contests. Funny thing, I haven't learned $?!t from you. I bet you are a closet Dr. BBQ fan. you only bring his books out at night and read them under covers by the beam of a flashlight feeling all giddy every time you do it. Kind of a disturbing picture but probably close to reality.
