Wood Smoke

I have easy access to a wide variety wood. Is it better to smoke with fresh wood, or to let the wood season? Is it better to smoke with the bark on or off? A piece of oak fell in my driveway last year after a storm, and I smoked a few chickens with it the same day. The smoke smell and flavor was much stronger than I'm used to, and I havent tried "green" wood since. I watched a re-run of pitmasters today and Myron Mixon was out getting fresh peach wood, and he referenced amount of sap on the wood. Any suggestions?
