Getting the Egg up to temp seems to have been covered. Once the temp starts to rising it will take off and get to extreme temp in a hurry so don't leave it. Burp the Egg befoe you open it to cut down on flashback at high temps. The Egg is one fine steak cooking machine. Many like the cast iron grate to get grid marks.I found a small cast iron grate thatLodge makes works great on top of the stock grill for the same results.
