Practice and more practice .. each year judges flavor profiles change like the weather ... you need to go to some local bbq places , taste the sauce and then go to local stores and see which sauce looks like it's moving the most.Some like it sweet , some like it sweet n hot and some just like it runny and spicey ( vinegar ) based.
