I have been cooking some from RD last couple of weeks. The best results came when I smoked them at 250 for 3 hours and then braised them in beef broth and 2 cans of diced tomatoes in the oven for an additional 2 hours at 275. The tomatoes kept them up out of the liquid. Remove the membrane from the back also, learned that one the hard way.
