How many butts are you cooking...maybe four? If yours was my problem, I'd cook'em and pull'em on Sunday, put each pulled butt into its own ziploc bag, smoosh it out as flat as possible and burb the bag as completely as possible. Using a food saver would even be better if you have one. I'd bury the bags into a cooler full of ice for an hour or two to chill down the meat as quickly and as safely as possible (it would take too long to chill down if you just put them straight into the fridge). After they're good and cold, remove them from the cooler and place them into the coldest part of the fridge. They'll keep fine until Thursday. Do you need help with reheating? Good Q'en On Ya'. John
