A friend of mine killed a moose up in Canada and brought some meat back to Italy. It was more like a roast and we cooked it and sliced it similar to brisket We did wrap it in bacon though and lightly sauced it in the end. It was good but I think that at 3/4 inch I would marinate and flash it on the grill.
