After reading the post on comment cards I thought I would pitch this out to discuss. I have judged and cooked both half hour and hour turn in. I know some folks would not like the added time. Some would because it would give you clean up time and time to think about the next turn it. From my judging I have found the hour turn in gives more time to taste the product and think about it. If you get something that was not good it gives you time to get that taste gone. By the time you get to brisket you do not feel as full and give it a little more true judging Also time to do comment cards We cook both ways and it seems for some reason we still get in a rush at that five minute mark. We will keep cooking both ways but thought this might get some thought and comments as this week seems to bring more discussion.
