I have two comments. first, as a cook, and I do not get to cook that much, but in my last contest I had a very, extremely helpful comment from a judge who told me my rib meat pulled off the bone in one piece and that is why he/she scored it 6 for tenderness or it could have been the person who score 5.
As a judge, I do not think it takes that long to write a comment card, there is always time left. I would not want to spend that much time sitting around waiting for the next category. I also think that brisket scores would tank. You can only fool the digestive system for so long that you have had enough to eat.
