At home I would guess that you don't do one or all of the following:
- Don't inject
- Don't marinade
- Don't wrap
- Use your competition rub or sauce
At home you stick to basics and the old school of preparation and smoking...
That's what the current day judges are looking for at turn-in, back to basics with a meaty and smoky flavor without a "candy coating"...
