As a judge, I agree 100% with The Virginian. But hey, it's your best effort that is being judged and if you think leaving the membrane on produces your best ribs, then you live & die with the results. I recommend against it. There are other ways to make sure you get moist, tasty meat with great texture, but that's just my opinion.
