I never said "any judge". I said some judges.
1) I've sat at CBJ tables where "some" judges told me they liked the roast beef flavor of a certain entry. I'm sure I'm not alone.
2) I've eaten good brisket from many pits all over Texas. I know the ones that take short cuts through chemistry and those that cook it the way their family did 100 years ago. No foil, no injection. Just meat, salt and pepper, heat, smoke and time.
