My experience varies based on the type of meat and rub. As long as the meat feels, smells, and tastes okay, I have never had a problem. Ribs keep the longest for me (as long as two weeks in the refrigerator, pulled pork less long (I suspect more surface area), and sausage the least (gets slimy and/or moldy). I have had pulled pork that was fine for more than two weeks using a vacuum sealer.
