Background: I know my way around a kitchen but BBQ is a new one for me.
So I don't have a proper smoker, just a gas grill to work with, but I have a plan. How evil is this?
I've soaked the ribs in apple juice for 12 hours, then poured it off and now they are soaking in a nice sauce/marinade recipe I found that includes celery seed, cinnamon, nutmeg, apple cider vinegar, ketchup, yada yada. I made up the sauce two days ago so the flavors could blend.
I reserved the apple juice and plan to put it in a pan in the grill to keep the ribs moist while they cook at 225F
SO here's my question: for a 2.5 pound rack of Texas ribs, how long can I let them cook in my pathetic gas grill on low with apple juice steam?And how soon should I start basting them with my marinade, if at all?
