Thanks for the feedback. The ribs are pork with lots of meat and not much bone. My plan is to use the front burner on low, and put the meat on the top rack at the back. With the lid down this gives a temp of 225F. I cooked some corn in the husk that way last week and after two hours the corn was about perfect.
I do have some oak logs and a chainsaw, so maybe oak noodles are in order
