When you bite your ribs, the meat should come clean off the bone but not fall off the bone. I would think after only 3.5 hours, you'll still be doing a tug-o-war when you take a bite.
Hardest thing about learning to BBQ - you can't rush it. It's done when it's done. I know 5-6 hours for a rack of ribs sounds like a terribly long time but the product at the end of the long wait is so much better.
