Now tat is some good empirical info, thanks! You're right, last night's ribs had to be gnawed at, so as good as they were, they were not done by your good rule of thumb. That makes it much easier to wait for this batch to cook a while longer. Thanks for taking the time to help. You folks clearly have a great community here. Kudos all around.
