Doing 3 slabs tomorrow as a Labor Day treat for the family. Putting ribs on at 11AM, ready to eat between 3 and 5 PM.
I'd like to mess with some Tender Quick that I've had, as a novelty. If I rub on the TQ at 7AM, I'm guessing the rest of the rub ingredients put on at the same time should not contain any salt. Would that be correct? Just planning on granulated garlic, black pepper, cumin, paprika, and some cayenne. I don't plan on mopping.
Tender Quick would be about 1 TBSP per pound.
Thoughts on salt content, if any are appreciated.
