If you're sharpening Forschner's, then the Chef's Choice is fine. I have one and it works well. If you screw up a $40 knife who cares?

However, I have moved up to Shun and Global and there's no way I would ever put one of those knives in an electric grinding wheel. I have the Edge Pro and would never go back.

Besides, spending some time on the front porch with the Edge Pro can be very therapeudic.
