I get a great edge on my knives with my bench grinder in my workshop. I'd rather sharpen a cheap knife to a great edge 100 times than spend $100 on a good knife. Sharp is sharp regardless of how much money you spend on a knife. Good steel holds an edge much better than the cheap stuff, but i'm not stranded on a desert isle. My grinder is in the basement and a chicago cutlery knife can suit me just fine. It's for home use, not restaurant.
