I know from what I have heard, putting in a bathroom in a commercial kitchen trailer / rv can cause you to not meet HD standards. I think (key word think) that you have to at a minimum have a free standing wall between the areas and that would help you possibly pass.

As a side note, I would ask what the overall costs would be to you vs. just having a trailer built. Unless you already have the RV, you'd have the purchase price, tear out costs (own labor I'm sure), purchase of equipment and install (prob own labor as well). I'd go buy equipment then build a custom traile around equipment. Easier in the long run
