I am just a back yard cook, but I got a call from a friend who wants me to cook a Brisk for half time for a TV football game tomorrow. I bought a Choice 7.75 lb one at Costco today. Damn nice looking piece of meat! I have cooked many 12 lb Briskets at 225/275 for 10 /12 hours and got very good response. I want to cook this one fast at 3225/375 so I donít have to stay up all night. Will this smaller Brisket still take 5 hours or will it cook faster? I have an old WSM and a Stoker.
