Thanks for the feedback. We used a ceramic knife this weekend at a competition and were not overly impressed. true, it was sharp but the surface of the ceramic knife pulled too much on the brisket, making it harder to slice than with my regular beef knife that has those little dimples in the sides.

And yes, the lightness of the knife made it feel uncomfortable although I assume you can get used to that.

Jury is still out on whether I would part with the $$ to buy one. May try it again next weekend before deciding
