So I tryed to cook that 7lb Brisket at 350* I could not get my WSM above 300* I have cooked at 350* before but I guess it just was'nt my day! It was done in about 4 hours, wraped it in foil and saved it in a cooler for 2 hours. NOT my best brisket! I will go back to the low and slow 10/12 hour cook.
