I agree with you John but I will also say this - I've witnessed a judge(s) nearly performing an autopsy on a chicken entry - almost deliberately looking for a spotch of red. Obviously the napkin test revealed a less than clear color. (If you poke around on anything long enough, you'll find something wrong.)
The judge was asked if he/she really felt the chicken was under-cooked to score it according to the instructions and criteria and yup - they gave it a 2. Disheartening. That chicken was done and then some - but we can not influence the judge - only reinforce that they understand the criteria and score accordingly.
