I agree that good bbq taste is subjective, but 2 hours seems a little short in the smoke. If you are running all wood you may get enough smoke flavor in them (if that is what you are looking for) but charcoal or pellets may not do it. Try more time in the smoke before you foil and then add a bit of seasoning on them when you foil. I like my ribs at home where they are in the wood smoke longer than the comp rib we turn in that is cooked with charcoal and foiled, but that is just me.
