Most major chains have in place requirements that the truck have temp recording equipment in place (tamper proof). When it arrives it is plugged in and if out of temp at any time the entire load is rejected. This info is also sent to corporate and each of the stores have temp recorders that are monitored and sent to corporate. This information is also available from my local Sysco if requested at delivery time. We inspect frozen and unfrozen to insure proper temps and have only rejected one item in the last five years and it was a case of them misloading the items in the truck, put a cold case in the dry goods area.
