I have retired (sold) my stick burning offset, first cook on a WSM and I am puzzled. Having trouble believing that the dome temp is running about 25 degrees COLDER than my top grate temp. Got a full water pan and two flats on the top grate. Dome temp about 230, grate temp reading 255 still. Trust my grate temp thermometer, but this seems to go against logic here and what I am used to about temps from higher up in the cook chamber. Someone put my mind at ease please. Everything out there does not seem conclusive to me.
