Seems to me that an Elk brisket would make better jerky. As you said Elk is a very lean meat, if sliced 1/8"seasoned, placed on the smoker till semi dry, yum. With all the BBQ-ed meat and beer at the Royal, if you had real Elk jerky you my friend you would a hero.
