A little smoke in the 1st hour or so for jerky is PLENTY, then just slow dry it from there. Dry it too fast or hot and you have beef brittle. I've tasted more craappy jerky screwed up by too much smoke than I could count. Burp and taste it for hours on just 1 bite. Better off with no smoke at all than too much. Probably the most frequent mistake there is for jerky is too much smoke, very easy to over do it.
