I've taken the bbq classes, built my own pits, using all of the newest technology, took the judging class, followed all of the methods of some of the local winners and have done okay. But tonight, I stepped outside of the norm and cooked a rack of spares on my weber kettle for only two and a half hours. They were the best that I have ever cooked. Pulled from the bone about a half of inch, left a bite mark, and were very tender. Thinking about changing it up. Maybe simple is better. Ed
