Competition "barbecue" has diverged from the real thing. The "winning techniques" being taught in the classes have little to do with barbecue. IMHO meat braised in butter or margarine in a foil covered aluminum pan isn't barbecue. We need to come up with a new name for these competition cooking contests. Having said that, we have done reasonably well cooking low and slow with no foil or margarine involved.
