I don't see anything wrong with spices and seasonings. To me it's about the cooking method. IMHO putting chicken thighs in an aluminum pan with butter, margarine, or whatever, covering it with foil and putting it in a smoker isn't cooking barbecue. Neither is slathering ribs with butter, honey, syrup, and god knows what else, and wrapping them in aluminum foil. You might as well cook it in the oven. Look up any definition of barbecue. It doesn't include the word "foil".
