there are tried and true ways to run a good bbq joint. but the cost of the final product is going to be high vs. your competition for food dollars. i sit in my place with a 5.99 lunch special watching car after car go through a mcdonalds drive thru selling a 1/4# for a dollar. there are three bbq chains in my town getting better deals on the price of pork and brisket. it is clearly an uphill battle but it can be done. if i had nothing else going i would do it but it sounds like you have a good chance at making a good living and providing security for your family. don't think i would give that up because you like to cook bbq.
