okay, here's what I got. I own a cheap cabela's version of the e.c.b. I have made several modifications to this smoker, and have made some good meat on it. I think the most I've ever managed on it was 4 6lb. butts at one time. Well now, here it is 11:00 Friday night. I've got 8 6-8lb butts brining as we speak, trying to figure out the best way to get them all cooked, pulled, and to the baptism reception by 9 sunday morning. My thought was 4 at time, 4 hours on the smoker the first group, then into the oven, 4 hours on the second group then into the oven, and finish them up in there. I also contemplated stacking my smoker, and my buddy's which would give me 3 cooking racks that maybe I could stuff all the meat onto, but it would be tight, take a lot of heat, and probably wouldnt be able to keep the fire hot enough to get the job done. Any thoughts??? Oh, and did I mention I have to work Saturday morning too.....
