A: Yes. KCBS has no rules about whether chicken must have skin. Nor does KCBS have any rules about whether the skin must be tender, crisp, bite-through, etc. They do require that a judge at least taste the skin if an entry does have skin.


Q: Is this recommended?
A: There are probably as many answers to this question as there are cooks competing. IMHO, any cook's answer to this question is fairly directly proportional to his/her chicken scores with/without skin.
