Exactly, on all points.
In reference to the over-saucing...it's STILL a meat contest, and yes, as a judge I am instructed to judge the sample as it is presented to me. That's what the guidelines say and I do my very best to follow them at all times.
BUT! if I cannot taste the chicken (or whichever category we're talking about at the time) that should be scored lower than a sample that has the same flavor profile, but has less sauce and I can actually taste the meat.
