i'm no expert, but i've cooked a bunch of deer. the steaks are good grilled, medium rare. the burger is better with some fat(pork) added, but is okay without it. i think you're on the right track with a crockpot. how about you rub the steaks with your favorite dry rub(available at hawgeyesbbq.com), brown them on a hot grill with some light smoke, then throw them(bulk) in a crockpot. add a little water, onions, peppers, and a bunch of your favorite bbq sauce(available at hawgeyesbbq.com). add some bacon strips, and slow cook them until they fall apart. some of the best deer i've had was in a crock pot with bbq sauce. this way you can tell people you smoked it, but forget to mention the crock pot :).

ps-a tied roast works too, just don't overcook it. if its brown, its dry. this is kind of an experiment, your results may vary.
