I rub the turkey and then coat with a thin layer of mayo. Produces a beautiful skin every time. I do think it might inhibit a little smoke penetration from the oily layer, but for a longer cook it also helps to keep from over smoking. I've been happy with the results. You can also play with this and add lemon or other ingredients to the mayo.
