Hi there, as Scottie said, the oven will do just fine for texture.
If you want to add some smoke to it you could get a Cameron Stovetop Smoker. This is a super fun toy to try. I haven't done a brisket, in fact haven't used it in a while. But I do love it and it is great for seafood and chicken. I would cook a flat in the oven to keep down the grease and smoke levels, then put it in the cameron for an hour at the end to get the smoke flavor. Should work great.
If you try it let us know--also this is an excellent price for a very good product. If nothing else it will give you something to work with while the burn ban is on. And I think you might get more smoke flavor than from the gas grill with the smoke box. Good luck. M.A.
