I do them one of two ways, Coat with a a light dusting of Santa Marira rub and a light dusting of a Brisket then smoke at 250 till the meat hits 132, foil and let rest for 20-30 minutes, slice on the bias and enjoy.
The other way I cook them is over Mesquite or Oak lump using the same rub and cooking method as above.
