Brine? Ugh -- No! If you have brining experience, then go ahead. Try w/o brining first. Inject with Scottie's Butter Creole injection (or you can buy the Cajun Injector brand), cook 225-250 for 3-4 hrs, wrap in foil and finish to 170 internal temp, then remove & rest. Very moist and flavorful! Use rub you like. Enjoy!
