Some people think that this method does affect the taste of the finished product. Others say that since the burning charcoal only gradually ignites the unburnt coals and so any burning impurities is small, resulting in no or little change in the taste.
My own personal opinion is that it does affect the taste and so I start fires with well burnt coals on a bed of lump. Then I add lump as needed to keep the fire burning. This makes me feel good.
But, what the heck I have seen really good cooks start fires with charcoal starter fluid and they seem to turn out really good products. I think it's all in the cooks mind and hardly anyone will ever know if you did or not.
