Here's a simple one used a lot out here in HI.
3 lbs spares, trimmed
1/4 C Veg oil
2 slices ginger
2 crushed cloves of Garlic
3/4 C rice vinegar
3/4 C Brn sugar
1/2 C water
2 T shoyu (soy sauce)
3 T cornstarch
1 & 1/4 t salt
1 t sherry
Trim ribs, pat dry with paper towels. Make marinade and pour over ribs. Let soak at least an hour.
Heat oil in saucepan, add ginger and garlic. Add ribs and brown well. Drain fat. Add vinegar, brn sugar and water and simmer (covered) for 45 min - 1 hour.
Can garnish w/ pineapple chunks and cilantro
