I buy spare ribs and trim them to St. Lois style myself to save on cost. It's not rocket science and the trimmings make great spectator snacks. I ALWAYS remove the membrane cuz my tasters tell me they hate to eat ribs when they have to spit-out that "plasticy stuff."
BTW - I'd hate to have to rely on the membrane to keep my ribs moist.
