Airflow. I work for a brick manufacturer and it is all about turbulence in our kiln. We pulse the burners and it gives us better brick. It allows the heat to do more work and is more efficient.
With BBQ my FE's cook faster than my BGE because of airflow. If you look at a convection oven you will see a lot of them kick down 25 degrees when you set the temperature. This is because they cook faster and can do so at a lower temp.
