Sounds great, Jon.... especially the italian beef au jus.... cheez whiz I'm not too sure about.
I've got three gallons of pozole rojo about to come off the stove. Instead of using traditional pig trotters and shoulder meat, I added braised rib trimmings and leftover bbq butt.
We're going to ladle up in a few minutes and carry the steaming bowls outside to a waiting fire... beers with the stew and maybe a little sipping whiskey later..... Cheers!
