First question: If you made a rub for a pork butt, which spices would you use in addition to salt and black pepper? The last two butts I cooked, I didn't measure, just sprinkled the spices on and rubbed them in. Think I used paprika, garlic powder, onion powder, dry mustard, and cardamon. I thought about adding cayenne and brown sugar, but didn't, maybe next time.
If I were to measure and mix it in advance, I might use two tablespoons of salt, one tablespoon of black pepper, and one teaspoon of the others. Second question is: Do those measurements sound about right?
